Pre-Cooling Is a Separate Duty

Produce arriving from the field carries field heat, and removing it quickly is what determines shelf life. That is a far larger cooling load than holding already-cold product, concentrated into the hours after harvest.

A storage room sized only for holding will not pre-cool a delivery in time, and the product loses days of shelf life before it is ever sold. Operations handling their own harvest generally need pre-cooling capacity specified separately rather than assuming the store will cope.
